maple and mustard-glazed salmon…(gluten-free) sandwiches!

This is another Serious Eats find that I loved. It was at least a month ago that I made it, but, hey, it’s been a busy month! At least I’m finally getting around to it.

With the leftovers, I made sandwiches. Really tasty ones. Check it out:

maple-mustard salmon, feta, and tomato salad sandwiches (gluten-free!)
1-2 maple and mustard-glazed salmon filets (leftovers)
2 Tbsp mayo
2-4 oz. crumbled feta
1 small vine tomato
1 tsp dill
1-2 tsp fresh lemon juice
your favorite gluten-free bread, sliced (I used Udi’s)

Mix the salmon, mayo, feta, tomato, dill, and lemon juice, with some salt and pepper to taste. Serve on toasted bread and enjoy!
